A delicious and light Chicken and Vegetable soup made from homemade stock Chicken Stock Recipe

Add the oil or butter to the pot and melt using Saute on High. Add the onion, carrots, celery and any other vegetables - stir through for around 4 minutes to soften
Add the cooked chicken and stir through. Turn off the saute now.
Pour in the chicken stock. Add the pasta/noodles if you would like and some Salt & Pepper to your taste.
Pressure cook on high for 9 minutes. Quick release the steam.
Allow it cool a little before you serve
