Chicken & Vegetable (Noodle) Soup

A delicious and light Chicken and Vegetable soup made from homemade stock Chicken Stock Recipe

 1.50 l Homemade Chicken Stock
 Cooked chicken From leftovers
 3 CarrotsCubed
 1 Large Onion
 Soup Noodles/PastaOptional - Quantity to your taste
 2 Celery SticksDiced
 Sweetcorn or other fresh VegetablesOptional
 1 tbsp Oil or butter

Add the oil or butter to the pot and melt using Saute on High. Add the onion, carrots, celery and any other vegetables - stir through for around 4 minutes to soften

Add the cooked chicken and stir through. Turn off the saute now.

Pour in the chicken stock. Add the pasta/noodles if you would like and some Salt & Pepper to your taste.

Pressure cook on high for 9 minutes. Quick release the steam.
Allow it cool a little before you serve
