This corned beef hash recipe is a comfort food for your family. Really tasty !

Corned Beef Hash
Yields6 Servings

 Pan of peeled potatoes Cut to a medium size
 2 Cans of Corned BeefCut the corned beef into cubes around 5-10cm
 2 OnionsMedium sized
 2 Red or Green Peppers
 1 Can of Baked Beans
 200 g Mature Cheddar
 1 tbsp Oil
 Knob of ButterFor the mashed potato (optional)
 Salt & PepperTo your taste

Chop your potatoes and place them inside the pot within the crisper basket (or a steamer basket if you would prefer). Add 300ml hot water into the pot.
Pressure cook on high for 6 minutes. Quick release the steam when done

Put the potatoes into a bowl/pan ready for mashing. Empty the Foodi pot ready to create the corned beef base

Add the oil to the pot and turn the saute/sear function on Medium/High. Add the peppers and onions. Let them soften but not brown. This will take approx 8 -10 mins. Stir regularly

While you are waiting for the onions/pepper to soften mash the potatoes with some butter if you like and add salt and pepper to your taste. Do not mash the potatoes super smooth, it is better if there is a bit of texture to them

When the onions/peppers are ready add in the corned beef and stir through gently with a wooden spoon or spatula. Do not let it become too mushy. Let this cook for approx 2-3 minutes while you continue to gently stir it through.

Turn off the Saute/Sear function.
Now add the can of beans evenly across the top
I like to sprinkle some black pepper over the beans

Spoon on the mashed potato

Top it with the grated cheese

Now select the bake/roast function at 190 C for 15 minutes

If the top is not crispy enough for you select Grill and grill until it is crispy enough to your taste. Now you are ready to serve
