Whisk the butter and sugar until light and creamy
Whisk in the eggs one by one
Whisk in the lemon zest and vanilla extract

Pour the mix into a greased loaf tin and smooth over the top
Using the low rack place the tin into the Foodi and bake on 145c for 55 mins (check with a skewer to see if it comes out clean)
Timings may vary from machine to machine so keep checking from around 50 mins, equally it may need an extra 5 mins

I have never baked a cake before (age 76) cooked this in the Ninja Foodi MAX 15 in 1 SmartLid whilst my wife out she was very pleasantly surprised tasted great. Excellent instructions.
One comment I would make is next time I will line the loaf tin rather than just grease it as I broke the cake getting it out of the tin
We love this cake and have also made it substituting the ground almonds for coconut and that just as nice
Have used this recipe in my AF100UK, substituted lemon juice and almonds,for coconut and mixed fruit, but any additions would work well, cherries, choc chips,other nuts etc. Took about the same amount of time, but was checking frequently as this was the first cake I had made in the Ninja!
2nd time making this cake in our Ninja 11×1 turns out beautiful, hubby loves it! Next time going to try adding coconut instead of almonds.

Hi what size tin would you use for this cake please and I have Ninja Smart lid 15/1 would I cook on bake or steam/bake. Just so confused for baking cakes whether to use bake or steam bake especially as wanting to try small cup cakes. Thank you
You can use a loaf tin or cake tin. Use whatever tin you have that fits inside the pot. We used Bake but you can use steam bake with the 15 in 1 – just add 250ml water at the bottom and make sure the cake tin is on the low rack so it isn’t inside the water if you steam bake.
Made this tonight absolutely beautiful it did take me 1hour 19 mins in my ninja foodi 13 in 1
I have just made this cake, I used an 8″ round springform tin and steambake for 45 minutes, my skewer test came out clear, but having removed it from the tin it would have benefited from a few more minutes. It does smell and look good though.
