Simple mashed potatoes to serve alongside your favourite dishes!
For slimming world members, this can be syn-free by substituting 1/2 cup of fat free yoghurt and 1 egg in place of the butter!

Pop 600ml of water, or stock if you prefer, into your Foodi pot.
Place the crisper basket into the pot and fill this with as many potatoes as you like.
For reference, I usually fill about half the basket and I would say this is enough mash to serve around 2-3 people (dependent on how much you serve! 🙂 )
Put the pressure lid on and set to 'SEAL'. Select 'Pressure' and set the temp to HIGH' and the time to 6 mins.
Once the timer is done, switch the Foodi off and quick release (move the cog to 'VENT').
When you are able to remove the lid, take the crisper basket out. At this point you can either pop the potatoes into a mixing bowl / pan or tip the water out of the foodi and put them in the Foodi pot.
Mash up the potatoes with some butter (to taste) OR if you want a healthier alternative, use an egg and around 1/2 cup of yoghurt. Season to taste with any salt, pepper, herbs, spices, etc.
Lumps or no lumps, that is the question! And I'm here to tell you.. it's personal preference! Mash to your heart's content!! 🙂
