Sicilian-style Air fried rice balls.

 600 g Cooked and Chilled RisottoOptional flavours can include Mushroom, chicken, Chorizo etc
 2 eggs Beaten (in a Dish)
 100 g Panko Breadcrumbs (On a flat tray is easiest)
 100 Mozzarella pearlsor cubed mozzarella approx 10 g each cube
 30 g Plain Flour (In A Dish)

Pre Heat the Air fryer to 200 line the Air fryer tray with baking paper or silicon mat. This should make approx 8 - 10 Arancini.

Take a small handful of the chilled Risotto and place the Mozzarella in the center and roll it into a ball (slightly smaller than a Tennis ball)

Roll each ball into the flour to coat it all over. Then dip it into the beaten egg to coat the outside.

Finally coat the ball by rolling in the Panko Breadcrumbs until evenly coated, and place on the baking parchment in the airfryer tray leaving 1cm between each ball then repeat until all the rissotto is used.

Finally, lightly mist with oil (I use Avocado Oil but Olive or Groundnut is fine)
Place in the Airfryer and cook at 200c for 15 minutes.
