Really tasty and crispy roast potatoes perfect to go with a roast dinner or as a side to any meal
Add 300ml hot water to the pot
Add the potatoes to the crisper basket and put on High Pressure for 1 minute. Quick release the steam when it is done.
Remove the basket of potatoes and empty the water out of the pot. Leave the potatoes for 5 mins to cool, this helps to dry out the outside and makes the potatoes crispier.
I use a separate colander to do the seasoning but you could do this in the crisper basket if you wanted to.
Pour around 2 tablespoons of garlic infused oil OR 1 tablespoon garlic paste over the top of the potatoes, Sprinkle on the rosemary, thyme salt and pepper and toss the potatoes in the colander until the seasoning covers all of them.... (it is better to toss them than to use a spoon or it breaks the potatoes)
If you use garlic paste spray the potatoes with a little oil now.

Done this today but I didn’t have dried thyme or rosemary used mixed herbs instead and left out the garlic not keen on garlic

For some extra flavour sprinkle some onion powder on potatoes for the last few minutes.
I did these yesterday, but for a change I used garlic granules, I use rapeseed oil or goose fat sometimes, as did AC whole Chicken I had separate stuffing balls, so no herbs on potatoes this time, will try with Chicken Oxo next week😋👍
Did you peel the potaoes ?

It’s up to you whether you peel or not – it is personal preference
can the potatoes be stacked on top of each other or do they have to be on the base of the basket? I have around 40 potatoes to cook!
They can be stacked but if you have lots they may take a little longer to cook and you will need to give them a shake every so often to make sure they are all crispy
Tried recipe perfect perfect crispy and crunchy outside fully inside. I made mine with chilli and garlic flakes and fresh rosemary and the olive oil to just coat. The chilli and Rosemary gave them a lovely warmth when cold too. Im saving this one it works
