Hearty Tomato Soup (Syn-free!)

A simple, tasty tomato soup for those chilly nights!

For Slimming World members: Due to the amount of sugar (a pinch) in this recipe, it has been labelled as 'syn-free'. If you choose to add more sugar to make it slightly sweeter, you will need to add the relevant syns per serving. You will also need to add syns if you choose to use oil instead of a low calorie oil spray.

 1.20 kg Ripe TomatoesAny kind, on or off the vine. Quartered, removing any hard cores / leaves / vines.
 1 OnionDiced
 1 CeleryChopped into little chunks
 1 Medium / Large CarrotSliced / Diced
 1.20 Litres of Vegetable StockMade up with stock cubes or stock pot
 1 tbsp Tomato PuréeCan added more, to make the soup a darker red
 ½ tsp SugarCan add more, to make the soup sweeter
 1 tbsp Low Calorie Oil Spray / Vegetable Oil
 2 Bay Leaves (Optional)
 1 tsp Basil (Optional)

Turn the Ninja Foodi on, select the Sear/Saute function on HIGH and let it warm up for a minute. Add the oil / spray some oil into the pot and add the onion, carrot and celery. Cook for about 5 minutes.

Soup Maker - Add the oil / spray some oil into the jug and add the onion, carrot and celery. Click on Saute

Now add the tomatoes, tomato purée and a pinch of sugar. You can add some salt, pepper, basil and bay leaves at this point, if you wish.

Multicooker - Stir through and place the pressure cooker lid on with the vent OPEN. Saute on LOW for 8 minutes.
Soup Maker - Just add the ingredients

Add the stock and stir this through.

Multicooker - Put the pressure cooker lid back on, setting the vent to SEAL. Pressure Cook on HIGH for 6-8 minutes, then Quick Release.
Soup Maker - click on 'chunky soup' or 'smooth soup' depending on your preference

Stir through and remove the bay leaves.

Now blend the soup, using a hand blender or by transferring to a blender. Enjoy!

** with the soup maker you don't need to blend the soup it does it for you

  1. Tried out this recipe but I didn’t realise it was for a pressure cooker I was following it and just put the stuff in the soup maker until I got near the end and noticed “pressure”.

    I’ll need to try this again later on when I get more tomatoes.

I was following it and just put the stuff in the soup maker until I got near the end and noticed “pressure”. I’ll need to try this again later on when I get more tomatoes. The catagory should be changed since it’s not for a soup maker.

    I’ll need to try this another time when I have more tomatoes and a PRESURE cooker

    1. You can easily use the same ingredients (for any of the soup recipes) in your soup maker, but instead of pressure simply click ‘smooth soup’ or ‘chunky soup’ and let it run it’s cycle. It often tastes nicer if you put your onions/garlic in first and saute first in the soup maker to bring out the flavour but it is not essential. Hope this helps
