Leek and Potato Soup (3 syns per serving)

 3 or 4 LeeksSliced (cut off the dark green tops)
 3 or 4 Medium/Large PotatoesPeeled and cut into cubes
 1 OnionDiced
 50 g ButterSalted or Unsalted
 850 g Chicken or Vegetable StockMade up with stock cubes or stock pot
 250 ml MilkSkimmed / Semi-Skimmed / Full-Fat

Turn the Ninja Foodi on, select the Sear/Saute function on HIGH and let it warm up for a minute. Add the butter to the pot and let this melt for a minute.

Now add the leeks, onion and potatoes. Stir this through and put the pressure cooker lid on with the vent OPEN. Saute on LOW for 8 mins.

Add the stock and milk, plus any salt and pepper. Stir this through and put the pressure cooker lid back on, setting the vent to SEAL. Pressure Cook on HIGH for 6 minutes, then Quick Release.

Stir through and then blend the soup, using a hand blender or by transferring to a blender. If transferring, you may need to do this in 2-3 stages, as the recipe makes quite a lot of soup.

  1. Made this last night and really good. I sautéed the onions until they were lightly brown then added the leeks for a couple of minutes followed by the potatoes. I also put a splash of olive oil and only a small nob of butter and it came out really nicely.
